Spinoso Metodo Classico Dosaggio Zero 2021

The "Spinoso" Metodo Classico sparkling wine by Rabel is a unique, uncompromising, and brilliantly artisanal creation. Standing as the estate's sole multi-varietal blend, it brings together three indigenous Piedmontese grape varieties. Harvesting is conducted separately for each variety to capture the ideal equilibrium between acidity and potential alcohol. The grapes are chilled to 0 °C to enhance the extraction of aromatic precursors from the skins to the pulp before undergoing whole-cluster pressing while ice-cold.

The vinification protocol marries technical precision with visionary blending: the free-run juice ferments in stainless steel, after which roughly 70% of the base wine remains in steel, while 30% matures in small 60-liter casks (formerly used for Zibibbo) until the following spring. A standout feature is the perpetual Solera cuvée established in 2016, where half of the small barrel is drawn annually for secondary fermentation and replenished with the new vintage. Following roughly 40 months of lees aging and at least 6 months in the bottle post-disgorgement, "Spinoso" is released as a Pas Dosé (zero dosage). By fusing the reductive verticality of steel-aged base wine with the oxidative complexity of small oak and a perpetual solera, Rabel achieves a sparkling wine that is bracing, edgy, yet profoundly complex.
