The "Rosserto" by Manzone Giovanni represents a rare and intriguing treasure in the heart of the Langhe: a dry white wine of astonishing depth, crafted 100% from Rossese Bianco. This heritage native white grape thrives across two prestigious MGAs in Monforte d'Alba—Castelletto and Gramolere—sourced from vines planted in 1982 and 2011. Perched on steep slopes with East-North-East exposure, the roots dig deep into limestone-sandy soils layered with red clay, requiring entirely manual farming.

Late harvesting in late September or early October guarantees noble skin and seed ripeness. Cellar practices favor low-intervention winemaking: a short skin maceration precedes pressing, followed by a slow, spontaneous 30-day fermentation with wild yeasts. After aging in oak tonneaux, the wine is bottled during a waning moon phase and released roughly two years after harvest. Produced in a micro-lot of just a few thousand bottles, "Rosserto" is a legendary, age-worthy white.
