Cellar protocols mirror ancient Georgian winemaking traditions: hand-harvested at peak ripeness, the Ribolla Gialla grapes are destemmed and fermented in buried Georgian amphorae using indigenous yeasts without any temperature control, undergoing extended skin maceration. Following pressing and racking, the wine returns to amphora for at least 5 additional months before beginning an extraordinary maturation of 6 years in large Slavonian oak casks.
