Pecorino Colline Pescaresi 2025

SKU: P3921S

The Pecorino Colline Pescaresi by Tiberio is a monumental white wine, possessing a structural drive, mineral depth, and aging potential that place it among the finest white expressions in Italy. Sourced by Cristiana Tiberio from an elite 3-hectare plot perched at 350 meters above sea level in Cugnoli (Pescara), this label is crafted from 100% Pecorino derived from massal selection of ancient clone profiles. The vines thrive on limestone soils overlaying a solid sandstone bedrock, yielding fruit with remarkable concentration, sharp natural acidity, and intense sapidity.

The estate's cellar strategy centers around unlocking the grape's skin-born richness while protecting its clean, vertical integrity. Following an early September manual harvest, the grapes undergo cold maceration on the skins for 5–6 hours at 7–8 °C to gently capture essential oil precursors. True to the Tiberio philosophy, no pressing is used, as the free-run juice is derived purely by gravity. Fermentation takes place with indigenous yeasts in stainless steel tanks, and malolactic fermentation is strictly avoided to preserve its razor-sharp focus. Honoring the wine's raw architecture, it is bottled unfined and unfiltered, followed by an essential rest in glass.
