Aptly described as a "cuirassier" of a wine, this legendary cru is sourced from the San Rocco single vineyard in Serralunga—a 2.1-hectare South-facing plot at 320 meters above sea level, featuring clay-calcareous soils and ancient vines with an average age of 70 years (trained via Guyot at 4,500 vines per hectare).
Cellar protocols marry traditionalism with uncompromising precision: alcoholic fermentation utilizes indigenous yeasts through an extended submerged-cap method (cappello sommerso) lasting 30 to 35 days at roughly 31 °C to achieve deep, phenolic extraction. The wine matures for 24 months in large Slavonian oak casks, followed by bottle aging. Yielding roughly 7,600 bottles, 520 magnums, and 60 double magnums annually, San Rocco is built for legendary longevity.
