Scarzello's cellar philosophy bridges classical traditionalism with minimal-intervention craftsmanship: spontaneous fermentation with extended skin maceration in conical wooden vats, followed by patient aging in large Slavonian oak casks (ranging from 25 to 50 hectoliters) for roughly 30 months, and extended bottle refinement.
