Pinner is Cavallotto’s fascinating take on a great, age-worthy white wine, born from viticultural curiosity and now a benchmark for lovers of mineral-driven wines. Made from Pinot Nero grapes vinified as a white wine, it breaks the traditional Langhe mold. The vineyard is located on the hill right next to Cascina Cavallotto, benefiting from the same meticulous care and exceptional terroir that make their reds world-famous.

The winemaking process is slow and precise: a low-temperature fermentation followed by 9–12 months of aging on the lees with daily bâtonnage to provide body and texture. The result is a wine of great structure, where initial aromas of tropical fruits evolve over time into elegant floral notes. Despite its immediate freshness, Pinner possesses exceptional aging potential, developing greater complexity and savory depth year after year. It is an outstanding choice for an upscale aperitif, but truly shines when paired with shellfish, rich seafood dishes, and cheeses.
