Langhe Grign 2024
The Grignolino by Cavallotto is a true rarity: it is one of the few examples of this grape variety cultivated in the heart of the Barolo zone, specifically within the renowned Bricco Boschis cru. While Grignolino is typically associated with the Monferrato region, the Cavallotto family chose to honor this historic variety by dedicating a plot to it that benefits from the extraordinary soil composition of Castiglione Falletto.
The winemaking follows a philosophy of minimal intervention: fermentation with indigenous yeasts and a brief 5-day maceration, followed by 12 months of aging in stainless steel. The result is a wine with a medium-light body and a characteristically pale, almost rosé-like color. The nose is strikingly complex, featuring notes of cherry and strawberry intertwined with a rich spicy and herbal bouquet. It is a vibrant and versatile red: perfect with cured meats and pasta dishes, it reveals surprising versatility with seafood and delicate white meats when served chilled (12-15°C).
