Cellar practice balances Burgundian sophistication with Piemontese precision: gentle pressing followed by partial fermentation in stainless steel and partial fermentation directly in French oak casks (barriques and tonneaux). The wine matures for approximately 12 months on its fine lees with regular batonnage to build palate texture and volume, followed by extended bottle conditioning.
