Döit Langhe Nas-Cetta del Comune di Novello 2024
The Piedmontese term Döit, which evokes concepts of grace, class, and refinement, is interpreted by the winery as the "right attitude" to be applied to both life and viticulture. This philosophy is reflected in the cultivation of Nas-cëtta in Novello, the premier terroir for this semi-aromatic white grape variety, capable of expressing a unique personality and a persuasive distinctiveness.
The winemaking process is meticulously designed to enhance its aromatic profile: the grapes, cooled in crates and destemmed at low temperatures, undergo cold maceration and soft pressing. The resulting must rests for about a week on its own lees in constant suspension, before fermenting in temperature-controlled stainless steel tanks. Prior to bottling, the wine completes its aging process in a combination of steel and concrete, maturing further on the fine lees.
The result is a wine of rare aromatic quality, characterized by a complex and intriguing bouquet that precedes a palate full of character. Distinguished by a striking finish, this white wine is ultimately noted for its enviable potential for longevity and evolution in the bottle.
