The Grignolino d'Asti "Sufragio" stands as a true oenological gem crafted by the Stella winery. This wine is sourced from a single, highly prized plot named "Sufragio"—a micro-parcel spanning a mere 0.5 hectares. Benefiting from an excellent south-west exposure, the vineyard thrives on medium-textured soil tending towards limestone and sand. This specific geological matrix is tailored for Grignolino, an aristocratic and demanding grape, as it amplifies its perfumes while smoothing its youthful edges. Yields are tightly managed for quality, averaging 7.5 tons per hectare of fresh grapes.
In the cellar, artisanal processing meticulously respects the variety's natural traits. Grapes are carefully hand-selected and harvested in perforated crates to keep the berries intact. The vinification protocol involves a gentle destemming and crushing, followed by a skin maceration of about 7 days—a window designed to extract its signature color and tannins without over-extracting. The wine then undergoes aging for 5 to 6 months in stainless steel tanks, followed by another 6 months or so of bottle rest before release. Production is a true rarity, yielding an average of just 3,000 bottles per vintage.
