Cava Arrels Brut Nature Reserva
The "Arrels" cuvée (meaning roots in Catalan) expresses the centuries-old winemaking tradition of Montau de Sadurní. The winery is based at Can Sadurní, a typical 15th-century Catalan farmhouse located in Begues, at the gates of the Garraf Natural Park. It is one of the oldest and most documented properties in the area, with family roots officially recorded since 1530 and a connection to viticulture that, according to archaeological excavations in the estate's cave, dates back to the Neolithic Age.
This Cava is the result of the classic Catalan blend, combining the strength and structure of Xarel·lo (40%) with the aromatic finesse of Macabeu (30%) and the freshness of Parellada (30%), grown under optimal conditions at the foothills of Montau. Following the initial fermentation in stainless steel, the wine undergoes secondary fermentation in the bottle according to the traditional method, aging for more than two and a half years (minimum 30 months) in the estate's cellars. As a Brut Nature, no dosage is added during disgorgement, allowing the wine to express with absolute precision the identity of a land cultivated by the same family for over 500 years.
