In the cellar, the Tibaldi sisters apply a philosophy aimed at safeguarding the absolute varietal purity of the grape. Grapes are meticulously hand-selected and harvested in small 20 kg crates. To perfectly capture the nuances of each terroir, the fermentation of each individual vineyard takes place in separate vats at a controlled temperature of 14-15°C.
